A super easy recipe today!
My mother-in-law makes this dish, and it has come to be one of my favs... so I thought I'd try it out myself.
(now that I actually have to be a wife and cook for my hubby)
You will need:
-2 boxes rice-a-roni long grain & wild rice
-1cup white rice (short grain. NOT minute rice)
-1/2 cup union
-2 cans cream of chicken
-2 cups milk
-2 cups hot water
-2 cups cheddar cheese
-1/4 tsp. salt
-1/8 tsp. pepper
-2 Tablespoons melted butter
-3 chicken breasts
Preheat oven at 400
Use a 9x13 dish - spray
Pour boxes of Rice-a-roni & white rice in the dish, set aside Rice-a-roni seasoning packets for later use
Add 1/2 cup union, cream of chicken, & milk
Take Rice-a-roni seasoning and mix with two cups hot water. Add to dish.
Sprinkle 1/2 cup of cheese over the top
Add salt, pepper, and melted butter
Cut chicken up into chunks, carefully add to dish
(your dish should be about to over flow)
Sprinkle the remaining cheese over the top
Cover with foil and bake for 1 hour
Remove the foil and bake for another 30 minutes
Let stand till cool
